Lemon, rosemary thyme, and olive oil on a chicken are the shit.
Last weekend I brined a chicken in kosher salt and brown sugar, then I made a paste out of garlic, basil, rosemary, thyme, and salt mixed with lemon juice and olive oil. The paste was applied to the chicken and worked under the skin, and then I stuffed the cavity with the juiced lemons and quartered onions.
It was cooked on my gas grill's rotisserie over a water pan with a foil packet of wood chips from oak whiskey barrels for a kiss of sweet smoke.
What a yummy chicken that was. I'd like to do it again this weekend.
