I saw a garlic themed episode of Good Eats the other night. I was high, so I don't remember exactly, but there's some trick to how many cuts/how much garlic is exposed to the air and how strong the flavour is. Something to do with a reaction to oxygen, perhaps? I dunno, I'd like to see that episode again.

I was watching a video and one of the bad guys mentioned something called potato babka so I paused the movie and looked it up, now I want to make some.  It has garlic too.

i really like Good Eats, very educational, and Alton Brown is a bit anal about things, which is something i relate to.

cft: i find it unvomfortable to be in a public eating situation... i just don't go out to eat, but today i sat in at a panera bread when my parents had lunch and it wasn't unlike being at a farm with the cattle flocking towas the trough.....
