Tonight I made vegetable marinara. Olive oil, various herbs and spices, browned onions, pasta water, garlic, crushed tomatoes, red wine, table squash, leeks, sugarsnap peas, red bell pepper, more water, and cooked it for a while. I cooked rigatoni, and did six super thinly-sliced pork chops on the side, intentionally overdone (I love cripsy pork fat and chewy pork loin). I had a bowl just now, and cut one of the pork chops into about 12 slim pieces, stuffed each slice inside a piece of rigatoni. Topped with parmesan and it was delicious.

for lunch, Albondigas. Its a meatball with rice soup with potatoes, carrots and calabasita. for dinner, fried chicken, green beans and corn with rolls. I have perfected my fried chicken. KFC aint got nothing on me.

I couldn't decide which sausages I wanted tonight, so I got both. Hot Italian sausage links and quarter pound Hebrew National franks. Did the sear-steam-sear thing with them in a pan, and finally ate one of each on two chunks of toasted baguette with a sprinkling of grated cheese and various condiments.

Haven't had a single B-B-Q rib this year. Or B-B-Q anything for that matter.

I made some Italian Sausage / Chicken mixture from combining two different Bertolli Meal Starters and added some fresh bell pepper and later chopped tomato near the end. I was shooting for a gumbo theme.

These Meal Starters are ok. You are supposed to ad pasta to them. I did that with the first one adding egg noodles. It was ok.
The mixture I recently made was part Italian Sausage and part Chicken Alfredo and was served with white rice. This was also ok.

But ok is pretty good when food is so expensive. I can get these 26oz bags 2 for $3.00 or $1.50 each.

It says on the package that it serves 5. Yeah you are supposed to add pasta. I guess a $1.00 can of Hunts Spaghetti sauce would serve ten if you divide it up,... just add pasta.   

Anyway they actually are pretty good so I.m not complaining.

Oh I actually had a bit of the chicken one left over because my skillet wasn't big enough, and I had some wrinkled old potato's sitting out (ya can't leave them in the bag) so I made a skillet of fried potato's in real butter and when they were almost done I added the meal starter.

It only made two servings but Damn it was good. A little left over bell pepper in that too.

This may be a regional thing, but I find that almost any sort of "starter kit" for anything I wanna cook can be achieved for less money and with better taste just by making things from scratch.

Can you buy the meat, vegetables, and Sauce to make two (serves 5) meals for $3.00 US?

I like making things from scratch too but these have pretty good meat examples-vegetables and sauce. Adds to other stuff like fried potato's or rice really well.

Nope, certainly not. Nor could I if the prices were adjusted for Antiguan prices, I'm sure.

But I also never cook for just a meal or two. I cook large batches and freeze individual portions in tupperware.

I try to make just enough for one serving of everything for every one andone serving for the BIL lunch. I dont like most fodds leftover coz they just arent the same. Having men around never leaves many leftovers anyway. now we're fixing to have 3. Im gonna need bigger pots and pans. Im not cooking tonight. we have a bunch of leftovers. Mole, guisado de res, chicken salad and Olive Garden takeout leftovers. I get to relax and just do dishes.

I cook mostly for myself and sometimes for me and my mum. Almost anything I cook gets eaten for the first day or two and then whatever's left gets frozen for work-meals later on. Partly for this reason I tend to cook things that can be frozen and still enjoyed, and also partly because that's the sort of stuff I like to cook anyway.

CFT: tonight I made a kickass dessert: one slice of multigrain bread soaked in a milk and egg and cinnamon mix, pan fried into a beautiful slice of french toast, topped with a mix of 1 tablespoon of lime marmalade, 1 teaspoon of lemon curd, and 1 teaspoon of dark brown sugar, whipped into a fine consistency. The sugar gave a very slight crunch and the two citrus-based condiments were awesome together.
