Did you bake it and then fry it Thrash?
I've heard that some people boil the chicken first to make sure it's done.
I haven't ever tried that.

Do you use a skillet or do you have a deep fryer?

Later that day me and the roomate went to Church's so I got my chicken and some jalapeno bombers to boot.  Damn those things are delicious.

Re: Current Food Thoughts Reply #815 on: December 18, 2014, 05:57:46 PM
I usually fry and finish in oven. It has to get that restaurant style crust. then take it out before its totally cooked, one to finish cooking, two for the oil that keeps dripping (I put it on a roasting rack, and it keeps it all hot and some are crunchier if its been a while.

Did tester tamales. theyre 15 min from being done. making pork and black bean tamales. I need to make em a little spicier, I think.

We went to Church's in Houston. Hadn't been since Miami in 2011. Pieces are smaller.

Dave, we're coming through around the 3rd hut probably won't stop there. Stop at Bob's in Brunswick and then on to Abe's in Davenport. But we'll stop for a day or so on our way back up. Going to trade the Accord for a truck and pick up my bike, bed, etc. I'll make sure we bring the fixins for something special.

Your situation resolved?

The first two look good, the bean and spinach one and the chicken and wild rice.

I have a slow cooker but haven't used it for years. Maybe I should dust it off?

I did that with the carcass from the turkey this year. But then I got sick for over a week and didn't deal with it.
I did eventually strip off all the meat separating the bones to discard and cooked it again.

I made one pot of turkey and egg noodle soup but decided it had been around too long so gave the rest to the cats.

i still want pizza, dammit. and wings and a salad.

Pizza with insane amounts of mushrooms, I love that shit, and real garlic sauce not that abused ranch bullshit.

I liked TG Fridays wings until they started putting the sauce on the side. (Plastic bag shit) Fuck that, they were good done in the microwave or oven before that.

tamales are bitchin.

Did you use conventional steamed masa for the casing?
There is a guy selling them in the parking lot at food for less most days  But his are pretty thin on stuffing.
