One of my New Years' resolutions is to eat healthier.  I don't really know how to go about it yet, but I'm starting small, trying to make sure to eat something healthier every day, even if it's just a salad.  I got some romaine lettuce, cherry tomatoes, cubed ham and light french dressing I've been using to make some good salads.  Not ultimately healthy, but I can't just go vegan all of a sudden.  And damn I love romaine lettuce.  I discovered it a few years ago but couldn't eat it because of the warfarin they had me on, but now I've been taken off it (replaced with a small aspirin a day instead) and I can eat leafy greens again so yay!

But I've been trying more vegetable things that I hated when I was younger that I'm surprised that I like now.  Broccoli for one, though I only really like it steamed.  I'm thinking for trying spinach next, the thought used to sicken me but now it sounds like it might be good.

The other New Years' resolution is to quit smoking.  It's my resolution every year but I never succeed, we'll see how this year goes.

Spinach can be really tasty or horrible, depending on what you do with it. Also, have you tried roasted broccoli? It's delicious with S&P, garlic, and olive oil. Something like this:

Spinach turnovers made with fresh spinach and a little Italian dressing as filling are pretty good.

Along the same lines as roasted broccoli, roasted brussels sprouts are pretty good too. Easier to do if cut in half.

Man, me too. And garlic is about the best tool at your disposal for healthier eating. It's good for you and it makes all sorts of things taste awesome.

Damn straight.  The roomate laughs at me because almost every time I pass the pantry, I grab the garlic powder, open it up and take a big whiff, then get an orgasmic look on my face. And I'll put that shit on anything, steak, chicken, soup, pizza, tuna sandwich, spaghettios, fish.... I even put it on ice cream once just to freak out my niece.  Tasted like shit but you shoulda seen the look on her face, it was worth it.

I'm going to make baked chicken thighs and roasted brussles sprouts tonight. (because all this talk made me want them) Might make mashed or baked potatoes. I like baked potatoes because I actually like the skins.

Must be that peach crisp I still need to make.

Yeah roasted garlic, it looses a lot of flavor but gains a nice easily digestible consistency.

I think I will have TV dinners tonight, one of the turkey ones and one of the Sweet and sour chicken ones.

But I found Bell peppers 4 for a dollar yesterday and so bought a pound of ground beef to go with them as a form of Spanish rice filling. Also spiced tomatoes and seasoning.

So yeah, Stuffed Bell Peppers tomorrow. ( I bet Zoomie likes these)

Also ... cherry pie!

i dont like the pepper itself. thats why i make the messican version, with poblanos stead of bell cause the extra egg wash and filling make excellent patties.
im roasting chicken, and rolling tortillas out and may put some beans on. chicken tacos maybe.. who knows.

I just got un hungry. made a triple tier bacon, spinach tomato on toasted croissant. a cup of coffee and split it with zoom. gonna go butcher a chicken, and make what I had said I was gonna make, roasted chicken in gravy with baby bellas, onions, quinoa and squash.
