Hahahaha you don't really have to soak them. That's only to reduce flatulence. It might make them cook a little faster.

I have soaked them over night drained and refilled them many times and I've also gone straight from the bag to the stove many times and I can't really see that soaking is worth the trouble. Another tip I've heard is to mix a tablespoon of baking soda in near the end, I don't do that either.

I'm sure it will be good. But I think you should start with dried beans and fresh tomatoes.

I'm a big fan of using canned stuff too lots of times, but for your first attempt, if you want to call it "from scratch" and really mean it, that's the way I would go. Especially with the beans, they make up the bulk of material and juice.

Have you thought of what meat you might introduce? Hamburger is pretty typical but other types of meat such as pork cutlets cut up, pork or beef stew meat or bacon ends and pieces work well, even shredded turkey or chicken. Of course you don't have to add meat at all, it's up to you.

Save a few diced up tomatoes and maybe some diced onions too if you like them to add near the end, I like the freshness they introduce when they haven't been cooked all the way down.
I suggest cooking the beans first, with the meat if you are using it kind of slow with some tomatoes and onions, maybe garlic, then adding your main spices later. Most salt and seasonings should be added very near the end, but some spices such as dried peppers need to be cooked along with, so make a determination early.

I've used the fast soak method many times too.

Place the beans in a pot and fill with water, bring them to a boil for a few minutes then take them off the fire to rest. Drain the liquid after a few minutes and rinse the beans thoroughly in fresh water, then refill and cook.
Seems like the best method to me if it is an issue at all..

But seriously, I haven't had a real problem with going straight from bag to stove.

I'll ask her what it is; I think it's diced tomatos, SALSA (heat up to you), beans, and ground meat ...

Hers is good as mild or medium; I can add cayenne pepper to it

Mine comes in 3 flavor options; medium, hot, and "give the neighbors the trots" ...

I put beans on to soak before bed. When I get home from work, they are ready to go. I have extremely hard water here though, and it almost acts as though I've added salt to the water.... (Never add salt to soaking or cooking beans.... it literally prevents them from re-hydrating) Anyhow, I boil them for ten minutes, then apply a lid to their pot, and leave them until I get home, and throw the rest of the chile together.

I had a pressure cooker, but for some reason the seal swelled up so big it wouldn't fit in the lid anymore. Now it's just a pot with a really loose lid. But the soaking isn't really to make the beans cook faster, it's to leach out the water soluble, yet indigestible sugars that cause most people to have flatulent gas.

I like them fried in butter, but those were done in a little bacon grease.
I cut them in half first to make them more manageable and cook a little faster.
