I made my own stock one time. Wasn't that impressed. Seems like a whole lot of work for nothing very special.
Did you follow a particular recipe?
I love making my own... everything, basically.
It really helps my anxiety level.... given my completely insane and irrational fear of other people touching my food.
Anyhow, I am still deciding whether I should use the roaster, or boil the chicken. I like the condensed amount of drippings I get with the roaster..... but it's more work, hauling the roaster from the storage and whatnot...
Also, I wonder if the chicken gets waterlogged if it's boiled........
It just comes down to how much work I want to do.
Either way, I'll make the stock with various delicious vegetables. Including, but not limited to: Garlic, onion, celery, and probably some hot pepper. Coconut oil also. (for good brains)
I have a gallon of turkey stock made from the carcass and remains. Still have a potfull for the cats but I have to sort the bones out yet.
My cat goes into purr/insane mode when I cook poultry. Almost like he's stumbled upon a fresh pile of catnip. =)
