There was a sign in the first karaoke place that said "Let's enjoy singing", but Mosh's jacket blocked "ging" when he hung it up.

1)Mini-donut holes with salt

Those were actually seeds/nuts, and UC still needs to tell us what the names of them were.  They were really tasty, though; seemed like they might be related to pistachios.  They were pretty easy to pick up with chopsticks, since they were kind of soft in the middle.  You'd dip it into the salt VERY lightly, and then down it.

Nick, can you name this dish for us?

2)Salmon with sour cream

This was pretty good; as you'd expect fresh seafood to be in Japan.  I don't think it was sour cream, though.

3)Hiroshima-style okonomiyaki (ok I know what this is called, but what is it like?)

This was fantastic.  It had egg on one side, and crepe on the other.  in the middle was some veggies and (I think) bacon.  When it was ready, the chef chopped it into 8-10 pieces (divided dorsally, then down each side).  There were other folks, though, that used a tiny spatula and ate it directly from the grill.

Nuts - Ginko nuts

Sour cream - it was wasabi mixed with mayo
