cft: I shallow fried some aubergine and I covered them in so much spice (I have a masala dabba and I literally just poured the spices in that had fallen to the bottom of it) that I'm now having to eat them in a sandwich, with potato, cheese, ketchup just to be able to eat without my tongue dying...

I saw a recipe for spice stuffed Okra while at the urologists today.
I didn't have time to read the article (as if I could see the type anyway) but it sounded good. It had many Indian spices.

I also saw an article about using tea as a spice for cooking which also sounded interesting.

Hey you never answered about those other puffy things, was that ketchup in the middles?

OMG I love these frozen shrimp. but I haven't yet come up with an idea for a real meal from them.

Just been thawing them out and using them like snacks.

Shrimp Fettuccine Alfredo

Lightly saute the shrimp in real butter, with crushed/minced garlic, and Chachere's ~ set aside.

Use the canned Alfredo sauce, Bertoli's is okay, there's another that we're out of, but I'll be replacing it real soon and will tell you the brand,
WITH:
a cup of cream
Italian seasonings
garlic powder
a cup of shredded parmesan cheese

Simmer while you boil and drain the fettuccini noodles,
add the shrimp to the sauce,
ladle over noodles,
and enjoy!

You can do Shrimp Scampi for finger-food/nibbling.

That sounds pretty good Wender, I've done something similar with chicken and it was really good. I like spinach fettuccine but for some reason it's kinda hard to find.

Theyre called pani puri. Doubt it was ketchup, not spicy enough. Probs tomato sauce of some kind. I've never had it with any tomato.

When we have it we have chickpeas, potato, onion, tamarind chutney and then the spices mixture for the water you buy.




also one of my favourite foods is baby aubergine cooked like the stuffed okra you posted.

That stuff sounds good actually. Simple and something I haven't tried yet. But I'm supposed to limit proteins.  Also any salty sauces like would go good on this stuff.

And I feel the same way.

CFT:  My 85-87 y.o. aunt (she doesn't remember lol) hasn't been cooking and eating regularly since my uncle died, so I'm making her little homemade dinners and putting them in those disposable plastic containers, figuring to go over there next week, clean out her pantry, as well as defrost and clean out her frig and freezer.

My Big Idea is to stock her frig with prepared meals, so that all she has to do is take out a container, throw it in the microwave for 2 - 3 minutes, and she'll have a decent dinner.  Because there are times when I don't cook, however, I need some ideas for really TASTY TV dinner-type thangs that I can supplement the home cooking with, so any recommendations would be MOST appreciated!  (I already know about Stoufer's Lasagna)

Cripes.  I'm actually considering starting a blog site about Elder Help for folks that have their OWN lives to try to keep up with ...

I'm making cabbage rolls for dinner. Unfortunately The cabbage I bought today is too damn fresh, I can't get the layers off whole and folded because they are too crisp. So It's going to be more like seasoned boiled hamburger balls with cabbage.

I need to use my crock pots more, with the summer weather. I am going to try lasagna this week. I've seen a few recipes online, but I think I'll just go with my own, ingredient-wise...the cool part is not cooking the noodles first.

CFT:  I watched my mom spend HOURS making lasagna, Just So,

and I'm sorry to say this, but Stouffer's frozen, totally natural Italiano,
with chunks of Italian sausage and tomato,

topped with my own 1 1/2 c. fresh Parmesan cheese for an additional 15 mins,

is Da Bomb.

And before you say it,

I can taste the diff between brands of ketchup,
yellow cheeses,
beer,
etc... 
My taste buds are dense, and sensitive.

What I am NOT?

Someone that has the desire to slave away in the kitchen,
whipping up a bunch of crap that the family may, or may NOT, like.

Making it from scratch is pretty easy,
but you end up with "leftovers" in the way of ingredients ~
I'm thinking specifically of the heavy cream ~
and you end up spending more.

We've been using the Classico Creamy one, and been very happy with it,
but we DO add spices and cheese to it!

I went out of the way to make lasagna on one occasion. I was sick of getting ripped off on the ingredients in frozen lasagna packages. The only drawback was that I used too much olive oil to separate the noodles; thus it turned into olive oil lasagna.

I'm itching to have some Filipino food:

Pancit: kinda like clear noodle chow mein

Ispageti: Spaghetti with hot dog/bologna slices instead of ground beef. (sounds disgusting, but it's pretty good)
