In Ca if we make chili from scratch we always start off with a pot of beans. Then add the meat and seasonings along the way.

That's just how we do it.

It comes out close to canned stuff. But with fresher ingredients.

Yeah, you can get canned chili with beans anywhere, but if it's homemade chili, putting beans in it is a sin against God down here.

chili powder, cayennesal, cumin, garlic, onion, bay leaf, bell pepper, tomatoes, celery. brown meat with salt and garlic. take it out, brown aromatics, add chili powders, brown them a little, add stock, add beans, cook til tender, add meat,  about another 30 min, et voila.

I love beans in chili. The chili my wife made for me for the Super Bowl had several different kinds of beans, and quorn mince instead of beef. It was fucking fantastic, if not Texas-approved.

Same, and fuck if I know, I've never made chili.  If it doesn't cook in a microwave, I've never cooked it.

And grilled onions are disgusting, I like mine raw and uncooked.

I like onions in both ways. raw in my enchiladas or tuna chopped extremely fine, cooked either big enough for me to pick them out, or small enough I cant get a big bite of them. I dig the flavor, not so much the texture when cooked.I usually put them in my molcajete in with the garlic im gonna mash.
I think today, since zoom left for MD, Im gonna make easy tacos and not cook til tomorrow evening.

what does he put in em? I make one tex mex food. chimichangas. basically fried burritos. cook a roast til it falls apart, refired beans, mix them together with sauteed tomatoes and onions, and cheddar cheese in an uncooked flour tortilla and deep fry. soooooo good.
