drunken friday night israeli couscous a la katie:
1. get home from the bar safely.
2. sautee some israeli couscous in some soy butter and olive oil and organic vegetable stock for about 15 minutes, with a can of rinsed (canned, not dried) chickpeas.
3. throw in some chopped parsely and diced red onion. sauteee for a few more minutes. season to taste, preferably while it's hot so as not to oversalt (which is common in cold/unheated dishes). i personally like to add some sliced trader joe's brand vegan sausage for additional protein, as well as some diced tomatoes if the dish is served straight away, hot or cold.
for the non vegans, i've been thinking that some hunks of feta crumbled over the top might make this even more delicious. the dish is almost, if not better, served chilled.
