Just boiled down the carcass, cut the bones up to release their hidden treasure.
Poured off a couple quarts of stock for later use already, put the bones back on with fresh water.
Still plenty to be cooked out of them.

That's how my mom made burgers growing up, before she developed an onion allergy.

The onion allergy killed home cooking, because now she makes mostly bland food.

I like to flavor my dishes with herbs, spices, and extras like citrus, shallots, garlic and onion. Totally love how I rarely add salt now days.

OMG - I made my own cream of mushroom soup the other day, used it for the "thanksgiving green bean asserole" and it was awesome. Used fresh beans too.

I liked that soup, I used Sherry in it.

(yes I said asserole, in honor of Dave.)

Making stock made more sense in traditional food preparation - scrap bone and vegetable were thrown into a pot that was continuously on low heat.  So it was constantly being used and replenished - used to add flavor to soups & stews as well as a way to make use of the scrap you would otherwise throw away.

I never make stock at home because I almost never have enough scrap to make it worthwhile (we're both vegetarians, so there are never bones and I don't leave a lot of scrap when I prep vegetables).  My wife will sometimes make something like a mushroom stock, with the intent of turning the whole batch into a sauce to be frozen into cubes for later use in stir fry.

I love making my own... everything, basically.
It really helps my anxiety level.... given my completely insane and irrational fear of other people touching my food.

Anyhow, I am still deciding whether I should use the roaster, or boil the chicken. I like the condensed amount of drippings I get with the roaster..... but it's more work, hauling the roaster from the storage and whatnot...

Also, I wonder if the chicken gets waterlogged if it's boiled........

It just comes down to how much work I want to do.

Either way, I'll make the stock with various delicious vegetables. Including, but not limited to: Garlic, onion, celery, and probably some hot pepper. Coconut oil also. (for good brains)

All this stuff you can add as needed when you decide to use the stock. I like to keep it pretty basic when making the stock.
Leaves it sort of plain but more flexible in the end.

Besides, onion and garlic are poison to cats.

Yep, guilty as well.

I made Turkey stew last night. From the previous stock. Along with with many vegetables and ground turkey.
It was very good.

I have a pot of chicken soup for them, they will get it tomorrow. 

I should add the leftover rice but I think I used it all

Something I've noticed in many recent UK movies is a preference for coffee?

Like in the old shows it was "a spot of tea" and now it's more likely to be "would you like to pop out for a coffee?"

For you guys that are there living it what's your take, is coffee an actual preference now in the UK.
We were always taught here in the US (mostly through old propaganda movies) that the the Brits would never give up their tea for coffee.

I haven't lived there in forever, but from what I've seen and heard, I'd say that tea is still the go-to drink for most Brits, especially at home. But coffee is definitely more popular than it used to be, especially as a drink to go have at a coffee shop or something.

Also, I would imagine there's something of a younger/older divide on this. Energy drinks are really popular in England, so I'm sure tea doesn't have quite the kick that people who've grown up on Red Bull and the like are used to.
