To celebrate the purchase of my new kitchen and Zoomie's install let's post our favorite recipes.
Chicken Picatta
What you'll need:
1 Can of Low Sodium Chicken Stock
A Few Chicken breasts, fillet, pounded tender
SOme flour in a bowl
Smart Balance Lite Butter
Some lemons
French Basil, sliced thin
olive oil
A squiggly pasta or small shells
Wet the chicken with water, toss in flour and cook in a pan of heated olive oil. Cook until the outside starts to brown. Be warned, fillets get dry easily.
Remove and drain on a paper towel
boil water for pasta with some olive oil and throw pasta in when ready, drain and set aside
In the same pan dump the chicken stock, 1/2cup of the smart balance butter and 2 tbs of flour, keep stirring.
Throw chicken in when you see the consistency is right. Shouldn't be runny, shouldn't be goopey. Just a nice sauce.
Once the chicken reheats (2 or so minutes) serve over pasta
Instant delicious.

"Hi, we're serving dinner. Our selections tonight are chicken piccata or seafood gumbo..."
"Piccata? Piccata! Picattattatatta!"
"Does the gumbo have corn in it?"
"I am Cornholio! I need picatta for my bunghole!"
"You'll have to wait your turn sir."
"Are you threatening me? My bunghole will not wait!"

ever since I figured out it's the quickest route to a girl's vagina I've made sure I'm a passable cook
Vegetarian Lasagna
Veges:
Tomatoes
Spinach
Zucchini
Mushrooms
Olives
Onions
Garlic
Eggplant
Other:
Lasagna Sheets
Olive Oil
Basil
Salt & Pepper
Cottage Cheese
Feta Cheese
Hard Cheddar Cheese (optional)
1. Cut up and steam the veges (except onion, garlic, olives and half your mushrooms) for a few minutes until mostly cooked. Put aside
2. Dice and lightly fry onion and garlic, add diced tomatoes and the rest of your mushrooms and simmer down to a regular pasta sauce. Add salt, pepper and basil to taste. Throw in some of your olives too.
3. Layer repeatedly in your baking pan until you run out: Lasagna sheets, pasta mix, steamed vegetables, cottage & a little feta cheese. On the top layer add some hard cheddar because it browns well, the rest of your olives, feta & cottage cheese. Be liberal with basil and pepper. Bake at 180 deg(c) for 20-30 minutes depending on your pan size. Serve with red wine at room temperature, a really simple green salad and some good bread if you have some. The wine doesn't have to be amazing, it's there to compliment the food, but it should also remove any last objections in her mind so try to spend at least $15 on a bottle of Merlot if you're unsure.
Note to beginners: It's important to prepare your bedroom before your guest arrives. Make sure your dirty laundry is at least dumped in the wash room and the window in your bedroom has been open for a while. To avoid carpet burn ensure a clear path from your door to your bed and remove any clutter from your bed beforehand. Foreplay should not be necessary after the first 2-3 bites.

The best thing I make from scratch is buttermilk pie.
HEY, I SHOULD BRING SOME TO THE BBQ!
But I'd have to make it before hand... or once I'm there?
-
BBQ? Are you fuckers holding out on a Southern girl??
Oh yeah, eitje theres a BBQ festival in NYC while you're here. But I'm sure they have those in TX all the time... but I like BBQ. :(
TOAST WITH PEANUT BUTTER:
ingredients:
bread
peanut butter
Toast bread.
Remove bread from toaster. Slather on peanut butter as desired. Enjoy with some coffee.

BBQ? Are you fuckers holding out on a Southern girl??
Do you want to come to Philadelphia?
I'm not inviting you, I'm just curious.

Oh that's where this BBQ is. No.

When I cook, I usually use 6 drops of Essence of Terror, and 5 drops of Sinister Sauce...

That sounds hot & awesome!

Buttermilk Pie sounds great Lucas, but I think something like that might actually kill me, and probably Geek too :-\ We're both very lactose intolerant.
I made a very simple meal last night, vegetarian burritos.
1 Box of Goya Rice and Beans
1 Ripe Avacodo
Salsa
Cheddar Cheese
Tortillas
Lay out your tortilla and scoop some rice and beans and chunks of avacodo onto it. Top with salsa and cheese. Roll that fucker up and eat it.
-
well, that sucks. it's pretty much all i know how to make.
my mom is extremely lactose intolerant (not hospital-worthy, but close) and she can eat buttermilk pie.
since it becomes a custard, maybe the stuff that's bad for you is broken down?

re: buttermilk pie
whole buttermilk:
"Serving Size: 1 cup (240ml); Calories: 150, Total Fat: 8g, Carbs: 11g, Protein: 9g"
from australia's better health website:
- Drink full fat milk because the fats slow the journey of the milk through the intestines and allow the lactase enzymes more time to break down the sugars.
- Have moderate amounts of dairy foods. Most people can tolerate the amount of lactose found in:
- Half a cup of full cream milk
- Use heated milk products like evaporated milk; they seem to be better tolerated because the heating process breaks down some of the lactose to glucose and galactose.
and my favorite...
- Have soy foods; they are lactose free, a good source of calcium and a good substitute for milk or milk products.
-
On Easter I had macaroni and cheese made with evaporated milk. Not fun. I think Australia's web site is full of shit.
-
wouldn't be surprised in the least.
-
well, i'll make it, and you can take a bite. if you're not dead 2 hours later, you can try more.
it gets better when it's colder!

Mac & cheese with soymilk is good stuff. I wonder what would happen if you tried to make this buttermilk pie with soymilk.
-
last week i made chocolate chip cake with pecans and the week before i made peanut butter cookies with chocolate chips.
i haven't decided what to bake this week. i like to surprise the mail man with fresh and fattening baked goods.

Are you trying to seduce your mailman?? Or are you just being friendly?

i got big into my slow cooker/crock pot recipes this year. here's one that is nice and hearty, but still has summery flavors:
layered pesto potatoes w/ sun-dried tomatoes
- 3tbsp olive oil
- 1 medium yellow onion, minced
- 2 cloves garlic, minced
- 1/3cup oil-packed or reconstituted sun-dried tomatoes, drained and chopped
- 1-1/2lbs yukon gold potatoes, peeled and cut into 1/4" thick slices
- salt and (of course) freshly cracked black pepper
- 1/2cup bread crumbs (i like whole wheat panko ones)
- 1/2cup homemade pesto (recipe to follow)
1. heat 2 tbsp oil in large skillet over medium heat. add onion, cover, cook until softened (approx. 5 mins). stir in garlic and tomatoes and cook 1 more minute. set aside.
2. lightly oil a 3-1/2 to 4 quart slow cooker. arrange half the potatoes in the bottom of cooker. top with half the onion mixture. season with salt and pepper and dot with half the pesto. top with a layer of remaining potatoes, remaining onion mixture, and remaining pesto. season again with some salt and pepper. cover and cook on low for 6 hours, or until potatoes are tender.
3. in small skillet, toast bread crumbs in remaining 1 tbsp olive oil over medium heat until light golden brown. set aside.
4. when ready to serve, top evenly with bread crumbs.
pesto
(you can always go store bought, but i don't)
- 2 large garlic cloves, peeled
- 1/4 cup pine nuts
- 2 cups firmly packed fresh basil leaves
- 1/2 tsp salt
- freshly ground black pepper
- 1/3 cup extra virgin olive oil
combine garlic and pine nuts in a food processor and pulse until you get a coarse chop. add basil, salt and pepper to taste, and process until ground into paste. while still pulsing, drizzle olive oil through top of processor until all is well blended.
a side of simple sauteed spinach or swiss chard is awesome with this, but i'll usually just do a simple spinach and red leaf salad with garden veggies and italian or balsamic.
-
haha, i am completely disinterested in our gay mail man.
-
Mac & cheese with soymilk is good stuff. I wonder what would happen if you tried to make this buttermilk pie with soymilk.
1. i don't think the soy milk would curdle in the same way as buttermilk might, because of the way buttermilk is extracted from the original dairy product.
2. there is such a thing as soy cream, which is thicker than soymilk, and can prove a better substitute than soy milk in some things (i do mac and cheese with the cream style), because soy milk can lend a watery nature to the entree. this might be obvious, but for cooking savory meals, always make sure the soymilk is unsweetened.
-
haha, i am completely disinterested in our gay mail man.
KK, just curious.

Mmmmm... Pesto.
I have to admit Katie, you definitely know your shit.

Yeah, pesto is amazing and so easy to make. Hummus too.

i have to know my shit because i can't expect anyone else to cook my weird food for me!
the following is an easy, awesome summertime lunch entree or snack...i bring a tupperware container full of these to the beach in my cooler and have all the omnivore boys drooling over my vegan delights.
asian mango summer rolls
- 1 mango, peeled, sliced into matchstick-like pieces
- 1 cup bean sprouts and/or seedless cuke, also sliced into matchsticks
- 1/2 cup fresh cilantro leaves (no stems, people)
- 4oz. super thin rice noodles
- 1/4 cup peanuts, finely chopped (i like to use roasted, unsalted ones)
- 20 or so rice paper wrappers (they can be tricky at first because they tear quite easily, but i got the hang of it by my third try at a roll the first time i ever made these)
- thai dipping sauce (recipe follows)
1. boil a medium sized pot of water. turn off heat, add noodles. let them soak in the water for 10 minutes, stirring occasionally. drain and run them under cold water when the time is up, until they feel cold to the touch. set aside.
2. have ready a large wide bowl (a pie pan works great) filled with hot water (can be tap, not boiling). i place one wrapper in the water at a time because they're so fragile, and they become flexible after about 30-45 seconds. very carefully remove from water and lay flat on cleared off surface/cutting board/whatever.
3. in lower 2/3 area of the wrapper you want to put about 1 tbsp of the noodles. sprinkle about a 1/2 tsp chopped peanuts over them. then on top of that i put about 5 mango matchsticks, then on top of the mango a few bean sprouts and/or a few cuke matchsticks, and finally a couple of cilantro leaves (i love cilantro, so i usually go pretty heavy with the leaves).
4. fold the left and right sides of the wrapper over the filling, then take bottom of wrapper and begin rolling. i try to make them as tight as is possible without smushing everything. it makes them a lot less messy to munch on. if they're too loose, the stuffing goes everywhere after your first bite.
5. keep chilled and covered until ready to serve.
thai dipping sauce
- 1/4 cup rice vinegar
- 1/4 cup water
- 1 tsp asian chile oil (for thin sauce variation)
- 3-5 tbsp thai chile sauce (for a spicier, thicker sauce) ***
- 3 tbsp roasted peanuts, chopped
- 1-1/2 tsp sugar (normally i use turbinado because it's unrefined, and i'm no lady)
mix all this shit up, chill, and dip those delicious love sticks in it before devouring them. mmmm.
***this is the way i do it, but the chile oil version was recommended by a vietnamese friend. there's a serious awesomeness to the sweet and savory combo of the sweet mango and the spicy thai chile sauce.***
p.s. i also have done these without the mango, and called them imitation california rolls. the rice noodles sub for sushi rice...avocado, carrots, sprouts, cukes, same thai dipping sauce...and the rice paper wrapper may not have the health benefits of nori seaweed sushi wraps, but mine are a fuckload easier to roll than actual avocado rolls. at least in my opinion.

The one meal I can cook well is creamed spinach, mashed potatoes, and steak. I can also buy a mean breakfast taco!

Lucas, I think we should make hip's asian mango summer rolls at our BBQ.
-
okay, but when you say "we", that's just going to be you. :P
I slept on it, and I decided that not cooking is more relaxing than cooking. :)
-
I figured it would be me, cause the only thing you know how to make is buttermilk pie.
-
I can also make PBJ sandwiches, turkey & cheese sandwiches, spaghetti, and hamburger helper!
Which you might THINK explains how I got to be 270 pounds, but that really was a lot of beer and a change in living conditions (more sedentary).
-
Lucas, I think we should make hip's asian mango summer rolls at our BBQ.
you will have to call them just "asian mango summer rolls", however. and i want pictures and reviews. when is your bbq?
-
Saturday, the 30th. Smoked ribs and rotisserie chicken. Yummy!
-
how about marinated then grilled veggie skewers and a nice slab of bbq-spice rubbed tofu (extra firm, and pressed), grilled to perfection...
?
-
You could get away with veggie skewers as a side item, but if I tried to BBQ tofu I'd have to lynch my own self.
-
as i typed "grilled to perfection", even i smirked about it.
-
Tofu is awful.
-
I'm not a fan of it, but katie once suggested that I try it panko breaded and fried. I think I'll have to give that a shot.
-
I doubt it can fail. You could panko-bread and fry cardboard and it would be delicious.
-
and i'm sure cardboard has a higher positive-to-negative nutritional value ratio than hormone-fed chickens.
-
I'd make my favorite party dish but dead hookers are getting harder to find, especially while they are still fresh.
So... Luke having another sausage party? Figures. PM me your email so you can get on the D-rad list.

Krsna, I can also make beer brats. Zoomie liked them.
-
I want beer brats.
How do you think kielbasa would do cooked in some sort of beer mixture?
-
Bratwurst? Somebody call me?
-
Krsna, I wouldnt call it VERY lactose intolerant, I'd call it HILARIOUSLY LACTOSE INTOLERANT.
If we eat this buttermilk stuff we'll be fighting for the bathroom and seeing who craps or vomits first!
Now that I'm thinking about it, this seems like a challenge! If you dare me enough, I'll do it. In fact, throw a free milkshake on top and I'll totally do it. Just keep your bathroom and a bucket open.
WHO WANTS TO MAKE OUT NOW? IM SO SEXXXY.
On Soy, Soy is SO BAD FOR YOU if you have an estrogen deficiency. Soy mimics estrogen and therefore your body slows down the production thus nullifying any meds you're taking (I learned this the hard way). Avoid if you have this issue, or you're over 45. So YES Chicken stuffed with hormones is far more healthier (for me and others in my situation) than soy products, and higher on the DELICIOUS scale.
... though I love soy and indulge in it here and there (LOVE tofu.)

I think we've used that before!
Just make sure you use dark beer, and not light beer.

It was posted many years ago. It's an LG staple.

It's not rotting after you shove a beer can up its ass and cook it.
Mmmm.
-
So when did you become a preachy vegetarian?
-
Beer brats are yummy. Free range organic chicken is fucking delicious.
I'm going to play devil's advocate here and link to this article (http://www.bodybuilding.com/fun/core_march_9.htm) about soy products and how bad they are for you. Some of the reasons soy is bad for you are:
- Phytoestrogens: (isoflavones) genistein and daidzein, which mimic and sometimes block the hormone estrogen
- Phytates: which block the body's uptake of minerals
- Enzyme Inhibitors: which hinder protein digestion
- Haemaggluttin: which causes red blood cells to clump together and inhibits oxygen take-up and growth.
Further more, most soybeans are grown on farms that use toxic pesticides and herbicides, and many are from genetically engineered plants. When you consider that two-thirds of all manufactured food products contain some form of soy, it becomes clear just how many Americans are consuming products, whose long-term effects are completely unknown.
The whole article is pretty short, but is packed with info (completely biased against soy). I'm glad I read it however, because I had no idea how potentially harmful soy based baby formula is.
I'll close this post with one of my favorite quotes, attributed to many people.
Everything in moderation, including moderation.
-
Everything in moderation, including moderation.
Absolutely. Except drinking.
edit (eitje): you keep hitting the "image" button, rather than the "quote" button.
-
all baby formula is potentially risky.
-
Is rice or almond milk a better option than soy? I have heard before that soy can be bad for the estrogen that it contains.
-
all baby formula is potentially risky.
I suppose it is, but consider this quote from the article concerning soy.
Soy is particularly problematic for infants, and soy infant formulas should be avoided. Why? Based on figures from the Swiss Federal Health Service, it has been estimated that infants who are fed soy formula exclusively receive five birth control pills worth of estrogen every day.
The studies that supposedly prove that infants on soy formula develop normally consider only height, weight and other measurements of growth as measured in infancy and early childhood. Many of the negative effects don't become obvious until puberty. Think about that next time you walk through the locker room at the gym.
Pediatricians are reporting more and more cases of emasculated boys reaching puberty with breasts and tiny penises. Undescended testicles are also far more common than they were in the past.
-
Is rice or almond milk a better option than soy? I have heard before that soy can be bad for the estrogen that it contains.
I woldn't worry too much about it, unless you're planning on drinking like a quart a day.
-
all baby formula is potentially risky.
I don't know, it's pretty risky whenever I try to go for the tit.
-
If lactose intolerance is your issue, try Lactaid. Otherwise, lots of people like Rice. Havent tried almond

Toast bread.

Thanks for the recipe!! It came in handy this morning. The bread I used was Wonder Stoneground 100% whole wheat. Tasty!

So when did you become a preachy vegetarian?
vegan, actually. oh god. i've become preachy? my worst nightmare, besides bagman's dick inching closer to my face in his wet dreams. i just made myself shudder.

Me too.
-
If lactose intolerance is your issue, try Lactaid. Otherwise, lots of people like Rice. Haven't tried almond
I think I vaguely remember having Lactaid and my stomach getting fucked up from it, because it has milk derived stuff in it. Or maybe this didn't really happen and I'm retarded. I do remember having some Ensure once, which is lactose free, and my stomach got wrecked because there's some weird milk derived ingredient in there.

drunken friday night israeli couscous a la katie:
1. get home from the bar safely.
2. sautee some israeli couscous in some soy butter and olive oil and organic vegetable stock for about 15 minutes, with a can of rinsed (canned, not dried) chickpeas.
3. throw in some chopped parsely and diced red onion. sauteee for a few more minutes. season to taste, preferably while it's hot so as not to oversalt (which is common in cold/unheated dishes). i personally like to add some sliced trader joe's brand vegan sausage for additional protein, as well as some diced tomatoes if the dish is served straight away, hot or cold.
for the non vegans, i've been thinking that some hunks of feta crumbled over the top might make this even more delicious. the dish is almost, if not better, served chilled.
-
by the way, fucking cook my recipes you assholes. they're delicious.
-
Right, I'll just swing by my local Israeli couscous seller
-
i get a huge box of israeli couscous for $1.99 from trader joes. it's like traditional couscous, only jucier and more rotund.
-
drunken satuday morning sandwich:
1. get some bread
2. put some maple tueky and harvarti on the bread
3. put everything into a single stack, and then eat it.
